Let's get this out of the way right up front: I'm not vegan, but I can't get enough of this vegan "cheese" made from cashews! It's crazy delcious and very easy to make. I first had a taste of this at a vegetarian restaurant called Leaf in Boulder, Colorado, and knew I had to try to make it at home. This ricotta is super easy to whip up in your food processor, and would go great in anything from lasagna to stuffed shells—maybe even on top of homemade pizza dough? Your creativity is the only limit!

Do you love all things spicy and zesty? If so, peppers are your perfect partner in meal crime. Hot to medium heat peppers are great as ingredients in dishes (summer stews, savory sauces and guacamole), and mild, sweet peppers make excellent entrées and side dishes (think stuffed peppers filled with crisp veggies and juicy meat, seasoned pepper sandwiches and veggie cocktails).

World War II gave us industry like we'd never seen it before. More than just bullets and machines—the factory revolutionized food, too. Following the war, 1950s Americana was defined by the ersatz foods of modernity: lime-green Jell-O, Betty Crocker cake mixes, canned vegetables, frozen TV dinners, Tang. Fresh fruits and vegetables were quaint old-world unnecessary reminders of our uncivilized past.
We embraced the quicker meal, with less prep and mess to clean up as a marker of our foray into a New World paved with neatly storable boxes, cans and tubes of fresh factory-pressed food. Yummy. But the effects of these foods have created the opposite image of what a futuristic society would look like. Instead, we're plagued with the significantly undignified rising rates of obesity, diabetes, heart disease; and destruction of our farmers' rustic connection with the earth, pollution, deforestation, genetic modification. And, it finally seems as though we're getting the message as a new study finds sales of packaged foods are steadily declining.

All throughout my childhood, the focus of kids' snacks was on portability, ease, convenience. Snack packs and things of the sort were all over supermarket shelves and in the pantry of any kid I knew. That being said, everyone always wanted to come to my house after school. Instead of ready-made snacks, my mom made ours, like, herself. Nothing fancy, mind you: a few sliced vegetables with dipping sauce or cut up fruit. But, for some reason, those extra two minutes made us famous in elementary school.

It truly celebrates the victory of the underdog when the outnumbered Mexican army pushed French forces out of Puebla on May 5, 1862. And while it doesn't fall on a Meatless Monday this year, we hope these recipes inspire you to make it a meatless Cinco de Mayo.
