In honor of National Grilled Cheese Month, we present this variation on the classic sandwich.
Prep time is 5 minutes, and cook time is 6 minutes. To make the best grilled cheese, butter the bread—not the pan—when preparing your sandwich.
All of the ingredients should be available at your local natural and organic food store.
Rustic Grilled Cheese
Makes 1 serving
2 slices multigrain bread
1 teaspoon brown mustard
6 thin slices shaved rotisserie chicken breast
2 thin tomato slices
1 slice cheese
2 teaspoons butter, softened
Spread 1 slice of bread with mustard. Top with chicken, tomatoes and cheese. Cover with remaining bread slice.
Spread outside of sandwich with butter.
Cook in skillet on medium heat for 3 minutes on each side, or until golden brown on both sides.
