Vegetarian Bagel Sandwich

We’ve been talking about hummus this week, including nutritional information and a recipe for making your own Orange-Parsley Hummus.

Here’s a quick and tasty recipe for vegetarians and nonvegetarians alike. All of the ingredients can be found at your local natural and organic food store.

Vegetarian Bagel Sandwich

Makes 1 sandwich

  • 1 bagel
  • 3 tablespoons hummus
  • 4 slices cucumber
  • 2 leaves lettuce
  • 2 slices tomato
  • 2 thin slices red onion
  • 1 slice pepperoncini (pepper)
  1. Spread hummus over both halves of bagel.
  2. Layer on cucumber slices, lettuce leaves, tomato slices, onion and pepperoncini.
