They add a chef's touch to any dish. The balsamic sea salt sounds amazing. I stumbled upon another neat company doing salts in my neighborhood in Seattle just last week at the farmers market. They do a nicoise olive sea salt, and some pretty interesting other flavors too, like apple five-spice and cherry pistachio. Definitely worth checking out.
