There is a difference between acute (sudden-onset) pancreatitis and chronic (developing/ongoing) pancreatitis, to which you refer. This may explain the difference in interpretation.

However, pancreatitis cannot be caused by eating one fatty meal. It is a condition that develops over time.
Please correct the misleading statement: “…Consider the dog that gets into that turkey carcass. Because of the high fat content, this can cause a really serious condition called pancreatitis.””
