Herb Baked Tomatos

My garden veggies are coming in by the bundles and I have to find new and exciting ways to eat them. One thing I always have a lot of are tomatoes, which are a great source of Vitamins C and A . Although cooking tomatoes lowers the Vitamin C content, other research shows that antioxidant activity in tomatoes is enhanced during the cooking process. Either way, tomatoes are a great way to eat heathly and stay healthy.

Try one of my favorites ways to clear out garden tomatoes….

Ingredients

4 large tomatoes

1 T unsalted butter

1/2 cup shredded raw cheddar cheese

1 t parsley

1 t basil

2 cloves garlic, minced

salt and pepper to taste

Directions:

Slice stem ends and bottom of tomatoes. Then cut into two thick slices. Place in greased baking dish. Top tomatoes with butter dots, herbs, garlic, and salt and pepper if using. Bake at 350 degrees for 20 minutes. Sprinkle with cheese and bake for another 10 minutes.
