Hi. We have just bought a house in Bulgaria that produces one tonne of white grapes per annum and really want to learn how to make organic wine as we are allergic to sulfites. Great to stumble onto this website.

In the past when it came to making a good wine from grapes, I’ve always selected to use a kit. Unlike my country wines where I’ve always gone from the fruit. Although I still feel it’s more work due to the amount of grapes needed, your post makes me want to give it a try.
