Healthful, organic choices make packing nutritious school lunches simple. Add this fun, unusual side dish to your child’s brown-bag lunch, alongside a sandwich or wrap. For added color and nutrition, throw in some slivered sweet red peppers.

String Cheese “Slaw”
Makes 6 to 8 servings
- 1 package (6 oz.) Organic Valley “Stringles” String Cheese
- 1½ cups carrot matchsticks (or shredded carrots)
- 3 tablespoons chopped basil, cilantro or parsley
- 4 teaspoons fresh lemon juice
- 2 teaspoons olive oil
- Freshly ground black pepper
Pull threads of cheese off each string cheese stick (not too thin). Toss with carrots, fresh herbs, lemon juice and olive oil. Add pepper to taste.
Toss the “slaw” in its container once more before putting it in your child’s lunchbox. Serve at room temperature or chilled.
