This dessert pizza recipe nixes the excess sugars and heaviness of those you’ll find at fast food pizza joints by honoring the simple, yet shinng flavors of fresh fruits: bananas and strawberries, as well as using healthy coconut milk in place of dairy. The result is a creative and light pizza dessert that you can shamelessly go in for more, slice after slice. Bring a surprise to pizza night with a homemade dessert pizza, which is ready to eat within minutes.
- 1 whole grain tortilla or lavash
- 1 can coconut milk, chilled in the refrigerator (look for BPA free can options or cartons)
- 1 tablespoon raw, organic honey, plus a bit more to drizzle over top
- 1 tablespoon organic cocoa powder
- 1 banana
- 5-8 strawberries
- Sprinkle of coconut flakes
In a small bowl combine the thick part of the coconut milk with 1 tablespoons honey and cocoa powder. Mix until smooth.
Spread the chocolate, honey and coconut cream mixture over the tortilla.
Slice the banana and strawberries. Spread them across the chocolate coconut cream.
Drizzle the pizza with remaining honey and sprinkle with coconut flakes. Enjoy!
Of course you can get creative and use other seasonal fruits and berries. Try sliced pears, pineapple, blueberries or even pomegranate seeds for a nice treat!
