Simple but full of late summer flavors, you can bet this fig pizza recipe will be a hit at your next dinner party. We like to bake it in our wood fired cob oven, but any kind of oven will do the job. This pizza recipe is so versatile that you can serve it as an appetizer, main dish or dessert on a warm August night; crumble some goat cheese on top for an additional bit of creamy zing.

Rustic Pizza Recipe with Blackberry, Caramelized Onion and Figs

Makes 2 medium size pizzas

Ingredients
1 batch of organic pizza dough
2 cups fresh organic blackberries
1 tablespoon organic arrowroot powder (corn starch also works)
1 tablespoon organic sugar or other sweetener
1 medium organic onion, sliced
1 tablespoon organic coconut oil
1 tablespoon organic blackstrap molasses
6-8 fresh organic figs, cut into quarters or eighths

Method
Prepare your pizza dough, and while you’re waiting for it to rise, begin preparing your toppings. Place the blackberries in a small saucepan and bring them to a simmer. Add the sugar or other sweetener to the blackberries, stir it in and take the berries off the heat. Dilute arrowroot powder into about one tablespoon of cold water, and mix into the blackberry sauce. Set aside.
Heat the coconut oil in a small skillet or frying pan. Add the onions to the pan once the oil is hot, and brown them on both sides. Drizzle the molasses over the onions and take them off the heat.
Once your dough has risen enough, cut it in half and roll it out on a floured surface. Now its time to preheat the oven to 450 degrees Fahrenheit. Place flour or oil on your baking dish, and place the rolled out dough onto it. Spread the blackberry sauce thinly, sprinkle the caramelized onions next, and gently place the sliced figs on top. Bake for 10-15 minutes and serve hot.
