Alright, alright, we get it, it's hot outside. Chill out. Literally!

In our recipe for No-Bake Berry Pie, fresh berries are gelled with lemon juice and just a tad honey. Filled into a sweet and crunchy graham cracker crust, the pie says, "Hello summer. You're hot, but I'm cool."

No-Bake Berry Pie

Ingredients:

¼ cup arrowroot

¼ cup water

6 cup mixed fresh berries

¼ cup agave or honey

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

1 prepared graham crust

Method:

1) Combine arrowroot and water in a small bowl; whisk until smooth. Set aside.

2) Combine 4 cups berries, honey, lemon juice, and vanilla in a medium pot; bring to a boil over high heat, stirring occasionally. Add arrowroot mixture; stir to mix. Cook until mixture is thickened, stirring, about 2 to 4 minutes.

3) Remove pot from heat; stir in remaining berries. Pour mixture into prepared crust. Cover and chill until firm, about 6 to 8 hours. Serve cold.
