We think making it a Meatless Monday every Monday in 2012 is just about as awesome a New Year's Resolution as you could come up with. And no doubt, eating healthfully is on the roster, too. So, this week we were inspired by all the healthy, vegan dishes that bloggers rung in the New Year with. We hope you are too.

This dip proves to be both nutritious and super interesting. Over at the Healthy Green Kitchen, they're serving up Muhammara, a Middle Easter dip. Made with roasted red peppers, walnuts, pomegranate molasses and a handfull of other pure ingrediets, you can dip right in! 

Ditch the sodas and maybe cool it on the cocktails. This recipe from For the Love of Food makes for a stellar stand in. A Non-Alcoholic Ginger Spritzer is a great way to start and end any Meatless Monday (or any day for that matter).

As beautiful as it is seasonal as it is delicious, the Garlic-Roasted Butternut Squash and Kale Wheatberry Salad with Pomegranate from Eat Well With Others makes for a balanced, eat-the-rainbow type of meal perfection.

Though you likely partook of your fair share of desserts in the latter part of 2011, that doesn't mean you need to nix sweets from your diet entirely. Give this recipe from Vegan Yack Attack for Raw Gingerbread Men the opportunity to accompany a steaming cup of tea, rounding out a lovely day of meatless options.
