Summer’s coming, and it’s time to stop cooking! Raw food isn’t just incredibly easy to prepare without heating up the kitchen; it’s also packed with health benefits. A raw diet tends to be heavy on the veggies and packed with high-quality ingredients that’ll make you look and feel your best. Get creative with these raw recipes, from Organic Authority and some of our favorite sites.
Snacks, Dips and Sides
Raw Almond Butter – A delicious way to get your protein, almond butter also stores well. Buy in-season almonds in early autumn, and stock up!
Hale Kale Salad – Ridiculously easy to make, especially if you’ve got kale in your home garden. The fresher the better!
Flaxseed Crackers – A raw food staple, and perfect for dipping. There are zillions of flax cracker recipes out there, but this one from Rawtarian, made with walnuts, is extra filling and flavorful.
Make It a Meal
Yukhoe - A Korean raw masterpiece, this recipe features marinated raw beef over a bed of pear and endive. Try it bibimbap style, with a raw egg on top. And, as always with raw animal products, make sure you’re using the very freshest, highest-quality organic ingredients.
Creamy Mushroom Soup - With a creamy base of cashew milk, this soup is easy to make, with all the flavor and richness of traditional cream of mushroom. Heat it up a bit if you like it warm, but don’t overcook.
Singapore-Style “Tossed” Salad – A hearty, colorful raw salad made with fresh salmon, tuna or halibut. For Chinese New Year, the tradition is to throw your salad into the air with chopsticks; this is not necessary to enjoy your food.
Thai Style Noodles and Veggies – From Rawmazing, a flavor- and texture-rich recipe with plenty of protein in its nutty sauce, plus fun Asian-style noodles.
Falafel – A non-fried version from Rawmazing, served with mango-pineapple salsa.
Zucchini Corn Cakes with Cilantro Cream – A truly raw-style recipe, this won’t remind you of any conventional dishes, but it’s chock full of protein and flavor, and absolutely delicious. Try this one on any non-believers.
Raw Cocoa Coconut Fudge – Rich and complex, this combination just wouldn’t taste the same if you cooked it.
Walnut Carob Cookies – Ready in five minutes, rich and moist, they’ll disappear just as fast as you make them.
Apple Cranberry “Cheesecake” – Cashews provide the creamy base for this inventive cake. Top it with any fruit you like, but try this combination first.
Macaroons – Another raw staple. There are many recipes available, but I prefer this one from Simple Medicine because it doesn’t require a dehydrator, and is simple and easy for anyone to make.
