What could be better on a cold day during the winter (besides an actual vacation that is...)? Serves 4 Ingredients 2 tablespoons lime juice
1 tablespoon canola oil
1 tablespoon minced shallot
2 teaspoons rice vinegar
1 teaspoon honey
1/4 teaspoon salt
Pinch of cayenne pepper, to taste
4 kiwi, peeled and diced
2 firm ripe bananas, cut diagonally into 1/2-inch-thick slices
1/2 cup diced red bell pepper
2 tablespoons thinly sliced fresh mint
2 tablespoons chopped cashews, toasted
Method In a medium-sized bowl, whisk together the lime juice, shallot, oil and vinegar, honey, salt and cayenne pepper. Add the kiwi, bell pepper, banana and mint to the bowl and toss to coat.
