Getting Cheesy for Meatless Monday with 4 Tasty Goat Cheese Recipes

In summer, it can be hard to even consider serving cheese. After all, you’re spending most of your time in skimpy summer attire! But goat cheese recipes can lend an edge to your dinner parties. The cheese is so flavorful, you only need a little bit to make your dishes sing, and its tanginess is the perfect way to add pizzaz to your Meatless Monday recipes.

Here are four of our absolute favorite Meatless Monday recipes featuring goat cheese. Try one out this week!

The first is a creative, tasty treat to make on the grill. Zucchini strips take on some nice color and char marks before being rolled around a filling of fresh goat cheese, parsley, lemon, spinach and basil. These goat cheese rolls make a super simple appetizer or hors d’oeuvre, but a few of them alongside a salad is also a great main for a warm Monday evening.

If you’re looking for a salad recipe with enough bulk to be a full meal, this is one to add to the list. A kale salad base is topped with goat cheese, dried cherries and millet, for a meal salad brimming with different flavors and textures.

Enjoy goat cheese in the simplest of recipes, with this goat cheese, chive and chili pasta. You can, of course, use any pasta you like, but we love the idea of using up all those broken lasagna noodles at the bottom of the box in a dish like this. They’re the perfect bites for pairing with the brightness of the cheese and chives and the subtle heat from the chili.

In the summer, we all love cooking up new pizzas to share. This is one of our favorites, pairing tangy goat cheese with sweet, seasonal grapes and plums. There’s no tomato sauce here, but a reduction of sweet dessert wine adds more than enough flavor, especially when paired with three different cheeses and the succulent, seasonal fruit. Cook it up on the grill for an al fresco Meatless Monday supper!
