If you’ve been avoiding avocados because they’re high in fat, it’s time to change your tune. Avocados are chock full of monounsaturated fat–fats that help rather than hurt your body. They also have folate and anti-carcinogenic properties. And of course, avocados are just plain delicious, which is why avocado recipes are featured on our Meatless Monday menus this week.
There’s nothing stopping you from eating an avocado plain with a spoon, sprinkled with just a touch of salt. But there are many other ways to enjoy avocados this summer; here are some of our favorites.
Guacamole is perhaps one of the most classic ways to serve avocado, but you can turn it into a full meal with this guacamole portabello mushroom recipe. The portabellos can be either sautéed or grilled before being filled with the simple guacamole. The perfect Meatless Monday choice this summer!
Guacamole is not the only dip you can make with avocados. This avocado hummus is a unique offering that’s sure to please. A combination of protein-rich chickpeas and avocado is spiced up with garlic, tahini, shallot and cumin. A touch of lemon, and this dip is ready to be served with pita and crudités!

Choose avocado as a tasty, Meatless Monday alternative to sushi. Combined with a touch of cream cheese, a bit of cucumber, or all on their own, avocado maki are an impressive appetizer or filling main when served alongside a seaweed salad and some steamed edamame. Use brown rice in your maki for an even more nutritious roll!
