anna getty sake shrimpThis is one of my favorite recipes. The flavors of the cooked sake, garlic, soy sauce, and ginger blend together perfectly. It is important to have some crusty country bread to soak up all the juices-your guests will fight each other for the last heel of bread in order to do this.

Shrimp are generally not overfished because they grow quickly and have a short lifespan. The problem with shrimp fishing is that there is a tendency to trawl up other marine wildlife in shrimp nets. So your most sustainable choice will almost always be U.S. farmed shrimp, with the exception of wild-caught Key West and Oregon pink shrimp. Imported shrimp rank very poorly in terms of sustainability.

Ingredients:

For Dough:

1 package of active dry yeast
1/2 cup of luke warm water
4 cups of all purpose flour, plus more for dusting
1 cup of cool water
2 tablespoons of olive oil
2 teaspoons of salt

This recipe is incredibly simple to prepare. It may take all of 15-20 minutes, if that. In the summer I add grilled stone fruit like peaches, nectarines, apricots or plums which add a wonderful contrast to the saltiness of the gorgonzola cheese.

Serves 6-8 as an appetizer

Ingredients:

1 Baguette - sliced on the diagonal into in 1/4" - 1/2" slices (about 10 - 12 slices)
3-4 tablespoons olive oil
4-6 oz of soft Gorgonzola
honey - enough to drizzle over bruschetta slices

I generally use home made crčme fraiche in place of mayonnaise when I make deviled eggs. It gives the deviled eggs a fresh tangy flavor.

Makes 1 dozen

12 hard boiled - eggs
Salt and freshly ground black pepper

Smoked Salmon Deviled Eggs with Caviar

3 1/2 tablespoons of crčme fraiche
1 tablespoon of lemon Juice
2 teaspoons of chives
3 oz of wild Alaskan smoked salmon, finely chopped
Caviar - choose your favorite
Lemon wedges
White pepper

8 oz of semi-soft cheese or cream cheese

6 oz of prosciutto, sliced thin
1/2 lb of semi-aged Italian salami such as salami toscano, sliced thinly
Assorted cheeses if desired, such as organic goat or gorgonzola and crackers
