oatmealMake this in bulk for a healthy, quick alternative to sugar-filled cereal! Get some protein in your breakfast with my almond butter recipe.

You can customize this recipe by adding nutmeg, cinnamon or your favorite berries for more flavor.  For an extra-creamy option, add 2 tablespoons of butter and some real organic cream!

This recipe is written to shorten the cooking time. If you forget to soak the oats overnight, pull all ingredients together in a sauce pan and simmer on medium low for about 30-45 minutes until tender.

Ingredients:

1 cup steel-cut oats
2 cups water
2 cups organic milk
½ cup almond butter
3 tablespoons dark brown sugar
½ cup goji berries (or other dried fruit or favorite berries)

Method:

Soak oats, water, and milk covered, overnight in the refrigerator.

Transfer mixture to a heavy bottomed medium saucepan. Add almond butter, brown sugar, and goji berries and bring to a boil. Lower heat to maintain a gentle simmer and cook, uncovered, stirring frequently, until softened about 9-12 minutes.

Taste to adjust flavors.

Serve what you want and refrigerate the rest!
