Organic Wild Rice Dressing PDF Print E-mail

Serves 3-4 people

Use as many organic ingredients for optimum flavor.

1 1/2 cups organic wild rice
4 cups of water or homemade organic chicken stock
1/2 cup celery chopped
1 cup of onions chopped
1 cup fresh mushroom buttons
2 tablespoons of organic butter
salt and pepper to taste

Preheat oven to 350°F.

Rinse rice in a sieve under cold water. In a medium heavy bottom pan, cover rice with cold water (or organic chicken stock). Simmer until al dente or almost tender about 35-45 minutes (rice will be partially open). You don't want water or stock completely absorbed.

Meanwhile chop celery, onions, and mushrooms. Heat butter in medium size heavy bottom sauté pan and sauté vegetables until tender. Salt and pepper to taste.

Stir vegetables into rice. Generously butter a baking dish. Transfer rice and vegetables to buttered dish. Bake rice, covered, 20 minutes or until tender and open.
