Grilled Heirloom Truffle Potatoes

Serves 8

Ingredients:

3 pounds of mixed colored potatoes - purple, red and white, quartered
2 - 3 tablespoons of truffle oil*
3 - 4 tablespoons of shaved or grated parmesan cheese
Salt
Pepper

Method:

Bring a large pot of salted water to a boil. Add potatoes to water and simmer for about 7-10 minutes until just fork tender. Drain potatoes and cool.

Prepare barbeque for medium heat.

Place potatoes in a large bowl and toss with 2 - 3 tablespoons of truffle oil. Generously season with salt and pepper to taste.

Grill potatoes until golden brown and crispy. Remove and toss with parmesan cheese. Adjust seasoning if necessary and serve.

* You can find truffle oil at your local specialty food market or you can order it online.
