Here’s a healthy twist on classic mashed potatoes–a vegan mashed cauliflower recipe. Enjoy the creaminess of this seasonal vegetable without all the carbs and dairy found in traditional mashed potatoes.
1 head cauliflower, cut into small florets
3 T organic olive oil
1 T. Bragg’s nutritional yeast flakes
salt and pepper to taste
1 clove garlic, chopped
Fill a pot with a steamer basket with 1 inch of water and bring to a boil. Put chopped cauliflower into the pot and steam until very tender, about 10 minutes. Drain.
Add steamed cauliflower to a Vitamix or food processor with olive oil, salt, pepper, nutritional yeast, and garlic. Blend until smooth.
Adjust seasonings as needed. Serve hot.
