Avocado is loaded with healthy fats and more potassium than bananas, not to mention it’s positively delicious. For Meatless Monday, we’ve united four of our favorite avocado recipes that use this fruit in a completely unique way.

When coated with panko and oven-baked, avocado becomes the perfect stand-in for fries. Lime juice will help preserve the green color of these avocado fries and also add a bit of a zingy flavor. The grilled avocados are stuffed with a filling inspired by Mexican street corn, made with a vegan cashew sour cream, corn, cilantro, red onion, and roasted jalapeño.
