Come on, Bill Clinton. We know—KNOW—that you have to have better cookie recipes than the one you just submitted to the Annual First Lady Cookie Contest: Clinton Family Chocolate Chip Cookies.


Well, Bill, we’ve got a few cookie recipes that aren’t as—sorry—uninspired as your pick. Please take a page from our book and do better next year if you officially get the “First Fella” designation.

Bill Clinton tries to adhere to a vegan lifestyle—in a recent interview, Bill says he avoids dairy and loves vegan food, but his doctor has asked him to eat salmon once a week. So, our below picks are “mostly” vegan—just like Bill. Read on to discover our favorite almost-vegan and vegan cookie recipes that are White House-ready.

Peanut butter cookie recipes are amazing.

1. Simple Almost-Vegan Peanut Butter Cookies (family recipe)

This is a favorite in my house because it’s so simple. My mom has made it for me for as long as I can remember and now I make it whenever autumn begins to blow in. Not only is this recipe simple, it is delicious, too.

Prep time: 5 minutes

Cook time: about 10 minutes, make sure the cookie tops don’t brown

Yield: 2 dozen


1/2-1 jar of organic peanut butter, or make your own equivalent amount
1 egg
1 cup organic sugar
1/2 cup of nuts of your choice


Preheat the oven to 350 degrees Fahrenheit. Lightly grease a baking sheet and set aside. Mix together all the ingredients in a bowl. Start dividing the dough into silver dollar-sized balls. Place the balls on a cooking sheet and press down with a fork to shape. Bake for about 10 minutes and remove from oven. Let cool and serve with coffee or milk.

Prep time: 15 minutes

Cook time: 15-18 minutes

1 cup dates, packed (soaked for 10 minutes in warm water and then drained)
1/4 -1/2 can of pumpkin, or equivalent of home ground pumpkin
2 Tbsp organic salted almond butter or peanut butter
3/4 cup almond meal (ground from raw almonds)
3/4 cup gluten free rolled oats
Optional add-ins: dried fruit, dairy-free chocolate chips, flaxseed, seeds, nuts


Add dates to a food processor and pulse until small bits remain. Add pumpkin and almond butter and mix again until combined, scraping down the sides as needed.

Add almond meal and rolled oats and pulse until a loose dough is formed. It will be wet and sticky. Scrape dough into a mixing bowl. If it feels too wet to the touch to form into cookies, add another few tablespoons of almond meal and/or oats and stir.

Next, add in 1/4 cup of your mix-in of choice. Chill dough for ten minutes and preheat oven to 350 degrees F.

Scoop out one tablespoon amounts of your cookie dough and form into loose discs. Arrange on a parchment lined baking sheet. They won’t expand so pack them close together, but not touching. Bake for 15-18 minutes or until golden brown and somewhat firm to the touch. Serve immediately.

3. Vegan White Chocolate and Macadamia Nut Cookie Recipe (Vegan White Chocolate and Macadamia Nut Cookies Recipe

This classic cookie recipe tastes great and it’s vegan, too!

Prep time: 12-15 minutes

Cook time: 12-15 minutes

Yield: 12 cookies


1 cup whole wheat flour
½ cup coconut palm sugar
1 teaspoon baking powder
½ teaspoon vanilla extract
Dash of salt
½ cup melted coconut oil
¼ cup almond milk, preferably homemade
1 tablespoon ground flaxseeds
½ cup chopped macadamia nuts
½ cup vegan white chocolate chips


Preheat the oven to 350 degrees Fahrenheit. Lightly grease a baking sheet and set aside.

In a bowl, mix together the coconut oil, milk, vanilla extract, and flaxseeds until evenly combined. In a separate bowl, mix together the flour, baking power, sugar, and salt.

Add the wet ingredients to the dry ingredients and fold together with a spatula. Add in white chocolate chips and macadamia nuts. Mix well. The mixture will be thick and able to be handled with your hands.

Use clean hands to roll 10-15 balls, placing them evenly apart on the baking sheet. Flatten each one slightly with the palm of your hand. Place the baking sheet in the oven. Cook for 12-15 minutes or until cookies are lightly brown. Let cool prior to serving.
