Apple-Celery Stuffing

We’ve offered a week of recipes to help you honor tradition, yet add some special twists to your organic Thanksgiving dinner. Today, we have one final recipe idea: Apple-Celery Stuffing.

As with yesterday’s recipe for Sweet Potato Bake, this dish gets some extra crunch from crushed corn flakes cereal. And if you’re a vegetarian, you can substitute tomato juice for chicken broth.

Preparation time is 30 minutes, and all of the ingredients should be available at your local natural and organic food store.

Apple-Celery Stuffing

Makes 10 servings (5 cups, sufficient for a 4- to 5-pound bird)

1/4 cup butter
1/4 cup finely chopped onions
1 cup finely chopped, peeled apples
1/2 cup finely cut celery
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon poultry seasoning
1/3 cup tomato juice, stock or chicken broth
6 cups corn flakes cereal (crushed to 3 cups)
2 cups dry bread cubes
2 egg whites

In a medium saucepan, melt butter. Add onions, apples and celery. Cook until tender, but not browned, stirring occasionally. Stir in seasonings. Remove from heat.

In a large mixing bowl, combine tomato juice or broth, corn flakes and dry bread cubes.

Beat egg whites until stiff but not dry. Fold into cereal mixture together with onion mixture. Mix well.

Use mixture for stuffing poultry or fish.
