Ghostly Meat Loaves

This clever meal provides fuel for a busy evening. Miniature ghost-shaped muffin pans make this haunted entree extremely easy to prepare.

When shopping for organic meat, choose lean ground sirloin or ground turkey (whichever your family prefers). For the ghostly potato topper, use homemade leftovers or prepared mashed potatoes from your local natural and organic food store. Finish plates with a side of peas and carrots, and add a few olives and peas to create facial features (see photo).

Ghostly Meat Loaves

Makes 12 mini loaves

1¾ pounds 85% lean ground sirloin or ground turkey
3/4 cup dry bread crumbs
1/2 medium onion, finely chopped
1/4 cup firmly packed brown sugar
2 egg whites
2 tablespoons tomato paste
3/4 teaspoon salt
3/4 teaspoon pepper
6 cups hot mashed potatoes
12 frozen peas, thawed
6 slices black olives

Preheat oven to 350°F.

Mix ground meat, bread crumbs, onion, brown sugar, egg whites, tomato paste, salt and pepper. Do not overmix or loaf will be heavy.

Lightly spray pan cavities with vegetable spray. Press mixture into pans.

Bake 25 to 30 minutes, or until internal temperature reaches 160°F for ground sirloin or 165°F for ground turkey and juices show no pink color. Remove loaves from pan; drain.

Spread 1/2 cup mashed potatoes over each loaf. Position peas for eyes and olive slices for mouth.
