Peanut Caramel Sauce

For a decadent, yet budget-friendly gift, present friends, coworkers and neighbors with jars of homemade Peanut Caramel Sauce—a luxurious ice cream topping that can be refrigerated for up to 1 week. You can even print the recipe on recycled paper and attach a copy so recipients can make their own batches.

Prep time is 10 minutes, cook time is 7 minutes, and all of the ingredients should be available at your local natural and organic food store.

Peanut Caramel Sauce

Makes about 2 cups

7 ounces granulated sugar
3 tablespoons water
A few drops lemon juice
1 cup whipping cream
2¾ ounces smooth peanut butter
1 teaspoon vanilla extract

Place sugar, water and lemon juice in a medium saucepan set over medium heat. Stir just until sugar melts. Then, swirling saucepan occasionally and without stirring, boil until sauce turns a deep golden brown, 5 to 7 minutes. Remove from heat and add whipping cream. Mixture will bubble vigorously.

Turn down heat to low, and stir to dissolve any caramel. Whisk in peanut butter until sauce is smooth. Stir in vanilla.

Let cool slightly. Pour into an airtight container. Refrigerate up to 1 week.

For a thicker sauce, serve right from the fridge. Serve warm for a thinner sauce.
