Savory Nut and Vegetable Stuffing

As promised yesterday, I’m posting a favorite Thanksgiving stuffing recipe from actor Ed Begley Jr., host of Living With Ed on Planet Green and author of Living Like Ed: A Guide to the Eco-Friendly Life.

I haven’t tried it yet, but it looks truly yummy—and I love the idea of including fresh apples and sparkling apple cider.

All of the ingredients should be available at your local natural and organic food store.

Savory Nut and Vegetable Stuffing

1/4 cup butter or oil
1½ cups chopped onions
1½ cups chopped celery
1 cup chopped carrots
1 box (two 6-oz. bags) seasoned dressing (stuffing mix)
1 cup chopped almonds or walnuts
1 cup chopped apples
1½ cups sparkling apple cider

In a large skillet, over medium heat, melt butter. Add onions, celery and carrots. Sauté vegetables until tender, about 3 to 5 minutes.

Toss with seasoned dressing, nuts and apples. Gradually moisten dressing mixture with sparkling cider, blending lightly. Cool thoroughly.

Lightly spoon stuffing mix into turkey. Spoon extra stuffing into a greased 2½ - or 3-quart casserole dish.

Bake covered for 30 minutes at 350ºF. Remove cover and bake 5 minutes longer, or until top is browned and crispy.
