Sweet Potatoes: One of Nature’s Perfect Foods


Sweet potatoes are a nutritional best bet, and they’ve become increasingly popular as more mainstream and organic consumers turn to vegetarian fare.


“Sweet potatoes are high in fiber and vitamin A,” says registered dietitian Cathy Hix-Cunningham, PhD, a professor of nutrition at Tennessee Tech University. “For the calories and cost of sweet potatoes, few foods are as nutritious.”

They also contain vitamins C and E, are fat- and cholesterol- free, and are low in sodium.

Be creative in the kitchen. Add cubed sweet potatoes to a chili or stew recipe. Substitute organic sweet potatoes for their white cousins in casseroles and main dishes.
