Vegetable Juice to the Rescue!

Researchers at the University of California, Davis, found that drinking vegetable juice each day can help you meet your recommended vegetable intake.


About 70% of U.S. adults fail to consume the five daily servings (2–3 cups) recommended by the U.S. Department of Agriculture.

In the Davis study, three groups of healthy men and women received dietary counseling on ways to consume more vegetables. As part of a healthful eating plan, one group drank one 8-oz. glass of V8 vegetable juice each day, while a second group downed two glasses of V8 per day.

Those who received counseling and consumed vegetable juice were far more likely to meet the daily recommendations, researchers found.

Specifically, more than 50% of those who drank one glass of V8 met their daily vegetable recommendations, as did 100% of those who drank two glasses. Of those who drank no vegetable juice, less than 25% met their daily nutritional veggie requirements.

“Drinking vegetable juice seemed to address some of the key barriers to vegetable consumption, such as convenience, portability and taste, so individuals were more likely to meet their daily recommendations,” says study author Carl Keen, PhD, Distinguished Professor of Nutrition & Internal Medicine at UC Davis. “Furthermore, vegetable juice drinkers reported that they actually enjoyed drinking their vegetables, which is critical to adopting dietary practices for the long-term.”

After six weeks, the vegetable drinkers reported they felt “more satisfied” with the ease of meeting their daily requirements.

“The best type of vegetable is one that you will actually consume, so it’s important to provide people with a variety of great-tasting options and ways to include them in their diet,” says Elizabeth Pivonka, PhD, RD, president of the Produce for Better Health Foundation. “That’s why we encourage people to explore all types of vegetables, such as 100% juice, fresh, frozen or canned, to get at least one serving of vegetables at each meal occasion throughout the day.”
