Vegetable Popsicle Recipes?! They’re Healthy and Pretty Darn Delicious


There are many popsicle recipes to choose from, but what about…Vegisicles. Vegsicles. Vegetable popsicles. Whatever you call them, frozen veggies on a stick are an excellent way to cool off during a hot summer afternoon. Big brands like Nestle and Dreyer’s are getting into the market with their own vegetable bars, but it’s easy – and much less expensive – to make your own vegisicles. So kick back and relax this summer with tasty frozen vegetable popsicle recipes that you can make in your own freezer.

First, you’ll need some sort of popsicle mold and popsicle sticks. Rubber molds work the best, because they make it easy to remove the frozen treat without breaking anything. You can also go old school and just use an ice tray, but don’t expect your popsicle sticks to stand up straight.

For super quick popsicle making, try a Zoku Quick Pop Maker. This nifty little contraption freezes three popsicles in as little as seven minutes. Place it in your freezer for 24 hours, then you can make popsicles on your countertop in record time. It also comes with reusable popsicle sticks, so you won’t have to use the disposable wooden ones.

You’ll also need a blender or food processor for most of these recipes. Now that you’ve gotten the equipment necessary to make your own vegisicles, it’s time to fill up the molds with your favorite fresh vegetables. Try the recipes out below, and put your personal spin on them to create new ones!

Each recipe will make about 4 vegetable popsicles, depending on the size of your molds.

  • Kale Pops – Blend together 8 ounces of apple juice, 2 fresh peaches (pitted), ½ banana, ½ cup frozen blueberries and a large handful of baby kale. Pour into popsicle molds and freeze.
  • Cucumber Lime Pops – Pulse 2 pounds of cucumber in a food processor until smooth, and then strain into a bowl to remove the pulp. This will give you about 2 cups of fresh cucumber juice. Now add ¼ cup fresh lime juice and 2 sprigs of mint, minced. Mix well, then add ½ cup sliced or diced cucumbers to the mix. Pour into popsicle molds and freeze.
  • Sweet Potato Pops – Blend together 4 ounces apple juice, 4 ounces orange juice, ½ cooked sweet potato and 1 banana. Add a touch of cinnamon, then pour into your molds and freeze.
  • Carrot Mango Pops – Wash and scrub 3 medium-sized carrots, then cook until tender using your favorite method (without oil). Peel 2 fresh mangos and cut as much flesh away from the pit as you can. Add the mango and carrots to a blender along with 4 ounces apple juice and 2 ounces orange juice. Blend until smooth, and then pour into molds and freeze.
  • Green Delight Pops – Puree in a blend 1 cup of chopped spinach, ½ cup of baby kale, 1 pineapple (peeled and chopped), 2 bananas and 1 cup orange juice. Add more juice if necessary, then pour into your molds and freeze.

Tip: Dogs love it when you make your own vegisicles. Kids do too – just make sure you blend any leafy greens until all the chunks are gone. They’ll never even know that their summer treats contain vegetables!
