We absolutely love a good Buddha bowl for a meal that's complete and well-rounded but also easy to serve -- no side dishes here. A Buddha bowl usually features grains, protein, lots of vegetables, and some kind of healthy seasoning sauce. Aside from these very basic constraints, however, the sky's the limit. This vegan, Cuban-influenced Buddha bowl starts with a base of brown rice and black beans. On top you'll find cumin-seasoned sweet potatoes and pan-fried plantains, followed by sliced avocado and homemade pico de gallo. There are a lot of flavors going on in this bowl, which are hearty and savory.
