Just when you thought you could separate your disciplined mid-week all-green-everything enthusiastic ways from your weekend dives into debauchery, the two worlds collide. Cocktail bars around the country are jumping on the cold-pressed juice craze bandwagon and are now offering detox-savvy green juice cocktails to their menus, with an exaggerated nod to token green leaf cleansing superstars, such as kale, wheatgrass, and spinach. But you don’t have to take a bus into the city to enjoy a (likely overpriced) concept that you can recreate in the comfort of your own kitchen. The following 4 green juice recipes are indeed cocktails you can kick back with. They're simple-syrup free and each feature green leaf juice or puree that offers incredible health benefits, even while you’re boozing. Enjoy!
1. Pineapple-Basil-Kale Smash
- ½ cup fresh pineapple, chopped into chunks
- 5 basil leaves
- 1 ½ ounces rye
- 1/4 ounce kale juice
- Extra fresh basil leaves and pineapple for garnish
Muddle the pineapple and basil leaves in a cocktail shaker until it is well mashed and resembles a puree. Fill the shaker with ice. Add the rye and kale juice. Shake for about 30 seconds.
Fill a cocktail glass with a few leaves of basil. Strain in the cocktail mixture and top with a pineapple slice.
2. Spinach Margarita
- 1 cup white grape juice
- 2 ounces tequila
- 2 ounces triple sec
- Juice of 1 lime
- 1 cup fresh spinach leaves
- 2 cups ice

Add all the ingredients to a high-speed blender and blend until smooth and slushy in appearance. Serve in salt-rimmed glasses.
3. Gin and (Green) Juice
- 2.5 ounces regular homemade green juice (any combination you already love works!)
- 2 ounces gin
- Juice of 1 lime
- Lime slice and fresh mint sprig for garnish
Shake all ingredients together in a cocktail shaker. Serve in a glass and garnish with a slice of lime and a sprig of fresh mint.
4. Cucumber Kale Mule
- 2 ½ ounces vodka
- 1 ½ ounces fresh cucumber/kale juice*
- ¾ ounce lime juice
- Cucumber slices for garnish
- 3 ounces ginger beer
Add ice to a cocktail shaker. Pour in the vodka and lime juice. Shake well. Strain the mixture into a glass filled with ice. Garnish with sliced cucumber and fill the remainder of the glass with ginger beer.
*To make the cucumber/kale juice, put a few stalks of kale through the juicer, followed by 1 cucumber. Strain the mixture and then use 1 ½ ounces of it for this recipe.
