Kale may no longer be making the headlines, but it's definitely still making its way onto our weekly grocery lists. And while it can feel like we've tried every possible recipe under the sun, in reality, there are still new and surprising kale recipes to try, if you know where to look. For Meatless Monday, we're featuring a few of our favorite ways to keep kale interesting and delicious.
This kale salad with tahini and white beans is pretty off the charts. The components of the salad are relatively simple: beans seasoned with lemon juice and parsley, served on a bed of kale and seasoned with tahini, garlic, lemon, and just a touch of maple syrup. We love how hearty this salad is for those last few days of winter.
When Caesar salad met kale, it was never the same. This vegan Caesar salad is even better than the original, with nutrient-dense kale standing in for romaine and a creamy, cashew-based dressing seasoned with mustard, lemon, and garlic. A topping of pumpkin seeds, sesame seeds, caramelized onions, and tangy nutritional yeast lends a healthy helping of umami and turns this salad into a real treat.
Avocado and kale aren't just two of our absolute favorite superfoods; they're also a match made in heaven. Kale not only keeps your guac super green, it also adds lots of nutrients to the already nutrient-rich avocado. While we love serving this dip at a party, it's honestly super tempting to just eat it with a spoon.
As much as we love raw kale recipes, it's just as delicious cooked. We love it in this vegan shepherd's pie, which is also chock full of tasty veggies like beets, beet greens, and peas and topped with a sweet potato and soy milk purée.
