Our first choice is a burrito bowl featuring low-calorie, low-carb cauliflower rice, flavored with salsa, cilantro, lime juice, and spices. On top of this already aromatic base, serve up homemade guacamole and sautéed peppers and onions. The colorful dish is filled with plant-based protein, fiber, and lots of vitamins and minerals -- and to make it even better, it only takes 30 minutes to make.

These burgers are not only vegan and gluten-free, they're also rich in vegan protein thanks to the quinoa and chickpeas, and full of herbaceous flavor with green onion, cilantro, parsley, garlic, and cumin.
