6 Quick Breakfast Recipes: Top Your Toast with Tasty Smashes
Avocado is just the beginning. Toast smashes seem to be on every brunch menu in the nation. Humble pieces of buttered, toasted bread are popping up smeared with hummus, beets, squash, feta, beans and everything else. But you don’t have to pay $12 to experience the toast smash trend. All you need is a fork or potato masher to created these delicious treats. Make these quick breakfast recipes at home, and treat yourself to a tasty start for the day.
Each of these quick breakfast recipes makes enough topping for four slices of toast, enough for two to four people. Start with just-baked whole grain toast, with or without butter. Add the toppings while your bread is still warm, and enjoy immediately.
1. The Classic Smash: Avocado
Remove the pits and skins from two ripe avocados, and mash together in a bowl with one tablespoon fresh lemon juice and one clove of fresh garlic, grated. Season the avocado mixture with a little salt and pepper, then mound on your toast slices. Add a final dash of fresh ground pepper to the top.
2.The Protein Smash: Avo, Egg & Seeds
Start this recipe by first making the classic smash above. After piling on your avocado, top the green mash (carefully) with an over-easy egg. Add a sprinkling of roasted sunflower or pumpkin seeds for added protein and crunch.
3. The Mexican Smash: Guacamole
Make the classic avocado mash recipe, and then easily stir in ¼ cup chopped white onion, ½ cup chopped fresh tomato, and half of a jalapeno (de-seeded and minced). Smear the mixture over your toast, and then garnish with freshly chopped cilantro leaves.
4. The Colorful Smash: Beets & Feta
In a bowl, mash together six ounces of pre-cooked beets (you can buy them pre-packaged at places like Whole Foods and Trader Joe’s if you don’t have time to cook them yourself). Mix in two teaspoons fresh orange juice, two teaspoons rice wine vinegar, and one tablespoon olive oil. Stir well, and then add three ounces of crumbled feta. Pile on your toast slices, and top with grated orange zest.
5. The Spicy Smash: Chickpea Cayenne
Combine 15 ounces of cooked chickpeas (or one can, rinsed) with one clove of fresh minced garlic, one teaspoon ground cumin, half a teaspoon ground turmeric, one tablespoon fresh lemon juice and two tablespoons extra virgin olive oil. Add a pinch of cayenne, salt and black pepper. Heat in a small saucepan on the stove until just warm, then mash everything together and top your toast. Garnish with minced fresh parsley.
6. The Italian Smash: Cannellini & Tomato
Add 15 ounces of cooked cannellini beans (or one can, rinsed) to a small saucepan or microwave-safe bowl. Add two tablespoons of extra virgin olive oil, one tablespoon of chopped fresh rosemary, and one clove of fresh minced garlic. Heat until warm, then season with salt and pepper and mash everything together. Top your toast with the bean mixture, then add a slice of fresh tomato and a drizzle of extra virgin olive oil.
