DIY Pumpkin Spice Latte Syrup Recipe

Pumpkin Spice Latte

You don't need a coffee shop to keep you supplied with Pumpkin Spice Lattes. Try our DIY recipe to make your own syrup at home to have an endless supply of delicious, homemade (and vegan!) pumpkin spice lattes. It's a healthy warm drink full of vitamins.

Pumpkin is filled with health-promoting carotenoids, including some of our favorite antioxidants--alpha and beta carotene--that can reverse sun damage and slow aging while preventing cataracts and tumor growth. The carotenoids also convert into vitamin A in the body, promoting healthy vision and proper immune function. The dark orange color means they're also rich in lutein, which has been found to be important for heart and prostate health.

Pumpkin Spice Latte Syrup


1 1/2 cups water
1 1/2 cups sucanat (or 3/4 cup honey for Paleo)
4 cinnamon sticks
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1 teaspoon ground nutmeg
1/4 cup pumpkin puree


Heat water and sucanat over medium-high heat until sugar dissolves. Do not boil. Add cinnamon sticks and whisk in remaining ingredients. Heat for about 5 minutes to marry flavors. Remove cinnamon sticks. Pour into a jar or other container. Add about a tablespoon of syrup to a cup of coffee with cream for a pumpkin spice latte or drizzle over ice cream.
