All it takes are a few frozen bananas and some fruit-based “coloring”. Here’s how to whip up this magical vegan treat with swirls of pink, purple, green, and yellow that you can eat any time of day without weighing yourself down (or getting that often inevitable dairy-induced stomach pain). Better yet: kids will LOVE it.

The unicorn craze has taken over lattes, smoothie bowls, and now ice cream! Despite its loud, festive colors, this ice cream is anything but offensive to the diet. The recipe is based in bananas, after all, and the colors come from none other than strawberries, blueberries, matcha, and mango!

Ingredients

For the Blue Nice Cream

  • 2 bananas peeled, chopped, and frozen
  • 3/4 cup frozen blueberries

For the Green Nice Cream

  • 2 bananas peeled, chopped, and frozen
  • 1 1/2 teaspoons matcha powder

For the Pink Nice Cream

  • 2 bananas peeled, chopped, and frozen
  • 1 cup frozen strawberries

For the Yellow Nice Cream

  • 2 bananas peeled, chopped, and frozen
  • 1 mango peeled, cored, chopped, and frozen

Preparation

  1. Using a high-speed blender or food processor, blend the ingredients of each different colored nice cream separately, until smooth and fluffy.
  2. Once blended completely, transfer each nice cream from the blender or food processor to a small bowl and let chill in the freezer until the other nice creams are finished.
  3. Dollop the nice creams into a glass pan, dispersing the colors evenly. Freeze for an hour. Do not freeze for longer, as the mixture will get very hard.
  4. Once ready, scoop the unicorn nice cream into cups or cones and top with vegan coconut whipped cream, cherries, and/or rainbow sprinkles (optional).
