The store-bought ice cream sandwich is iconic: That thick layer of vanilla ice cream wedged between two soft chocolate sandwich cookies. It's perfect for cooling down under the summer’s heat, and it is most certainly delicious, but it is loaded with cow dairy, preservatives, colorants, sugar, white flour, and lots of hard-to-pronounce additives -- not exactly the kind of thing you can get away with eating regularly. Luckily, this ice cream sandwich recipe takes the structure and flavors typical of the classic treat and constructs a healthier, body-friendly vegan, gluten-free, and paleo alternative. Enjoy!

Raw Vegan Ice Cream Sandwich Recipe

For the chocolate wafers

For the ice cream

  • 2 bananas, peeled, chopped, and frozen
  • 1 teaspoon vanilla extract
  • 1 teaspoon maple syrup
  • Water as needed

Add all the chocolate wafer ingredients into a food processor and pulse until fine and grainy. The more you pulse, the mixture should begin to clump together and form a ball that can be easily shaped.

Remove the dough from the food processor and place it on parchment paper lined baking sheet. Use clean hands to form a ¼-inch thick rectangle. Cut the rectangle into 8 equal-sized rectangles. Separate each of them slightly from one another. Place in the freezer for about 20 minutes.

While the chocolate cookies are in the freezer, make the ice cream. Combine the bananas, vanilla, and maple syrup in a food processor and blend until thick and creamy. Add water as needed. The mixture should mimic regular ice cream’s texture and should not be runny.

Remove the cookies from the freezer and place a large spoonful of the ice cream onto each of four of the cookies. Place each of the other four cookies atop each of the fillings. Press down lightly to distribute the ice cream filling evenly between the two cookies.

Pop the baking sheet back into the freezer for 20 minutes so that the ice cream sandwiches can solidify. Store the remaining ice cream sandwiches in an airtight container in the freezer.
