3 Paleo Pancake Recipes For A Grain Free Breakfast

You can still enjoy tasty flapjacks while sticking to a simple Paleo diet plan. We've got not one but three protein-packed recipe options that your brunch guests will never believe are grain-free!

One of the toughest parts of a grain-free diet is a lack of pancakes. While the texture isn't identical to traditional fluffy buttermilk pancakes without special Paleo flours, you can still enjoy tasty flapjacks while sticking to a simple Paleo diet plan.

Organic pastured eggs are the foundation of Paleo pancakes, and then you can add just about any flavor you like. Try these three paleo pancake recipe options for flourless pancakes the whole family will love.

1. Paleo Pumpkin Pancakes

Adapted from Practical Paleo

Serves 2, about 6 small pancakes


2 eggs
1/4 cup pumpkin puree
1 tablespoon coconut oil, melted, plus more for cooking
1 teaspoon pure vanilla extract
pinch baking soda
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
pinch ground cloves
pinch ground ginger
pinch salt
melted grass-fed butter (optional)
maple syrup (optional)


Mix wet ingredients. Mix dry ingredients in a separate bowl. Fold ingredients together. Add a bit of coconut oil to the pan or griddle and pour batter for 3-inch pancakes. Cook about 2 minutes per side. Serve topped with melted grass-fed butter and maple syrup, if desired.

2. Paleo Banana Pancakes

Serves 2, about 6 small pancakes


1 large banana
1 tablespoon coconut oil, plus more for cooking
2 eggs, separated
1/2 teaspoon vanilla
1/4 teaspoon cinnamon
melted grass-fed butter (optional topping)
maple syrup (optional topping)


Puree the bananas, coconut oil, egg yolks, vanilla and cinnamon. In another bowl, beat the egg whites until stiff.

Fold egg whites into pancake mixture.

Heat additional coconut oil in a pan over medium heat. Pour pancakes about 3 inches wide. Cook 2-3 minutes per side. Repeat with remaining batter. Top with melted grass-fed butter and maple syrup, if desired, and serve.

3. Simple Egg Crepes

Serves 2, about 6 small crepes


1 egg
1 tablespoon water
1 pinch kosher salt
coconut oil for cooking


Whisk all ingredients together until thoroughly mixed, with egg beaten but not overly frothy.

Heat a bit of coconut oil in a small pan or crepe pan over medium heat. Pour about 2 tablespoons of batter into a thin layer in the pan. Rotate the pan or use a crepe paddle to evenly coat the bottom of your pan.

Cook for 2 minutes, or until the crepe's edges begin to pull away from the pan. Flip and cook for another minute.

Repeat with remaining batter and serve.
