The Health Benefits of Beets
Betalains (which actually get their name from beets) have been shown to be anti-inflammatory and promote the body’s natural detoxification process. Betalain pigments also display potent antioxidant, anti-inflammatory and chemo-preventive activity, according to one 2015 study1.
Beets are also naturally super sweet – especially for a vegetable. And to circumvent the natural earthiness of beets, this recipe relies on beetroot powder, which affords all that subtle sweetness without those muddy undertones.
Beetroot powder is made from ground up dried or dehydrated beets. The pretty powder possesses a vibrant pinkish red hue and can be used as a natural food coloring for various recipes and baked goods. Look for organic beetroot powder at your natural grocery store or online. There should only be one ingredient on the label: beets, no fillers or additives necessary. Mountain Rose Herbs, a manufacturer of high-quality organic spices and herbs, notes that just a teaspoon of concentrated beetroot powder provides the nutrition in one whole beet!
In this recipe, beetroot powder joins creamy coconut butter for a touch of healthy fats, energizing maca powder (if you're not familiar with maca powder, read Maca; The Ultimate Get You-in-the-Mood Superfood), vanilla almond milk, and a drop of raw honey. The resulting beetroot latte is gorgeous and quite simply delicious.
