4 Pizza Recipes that Redefine the Traditional

1. Zucchini Boat Pizza

Makes 4 boats

Ingredients:

  • 2 zucchini
  • 2 tablespoons extra-virgin olive oil
  • 1 white onion
  • 1 eggplant
  • 1 large bell pepper
  • ½ cup tomato puree
  • Salt and black pepper to taste
  • ½ teaspoon dried thyme
  • ½ cup grated mozzarella cheese

Directions: Preheat the oven to 400 degrees Fahrenheit. Meanwhile, chop the onion, eggplant, and bell pepper. In a saucepan over medium-high heat, add the olive oil and chopped onion eggplant and bell pepper. Season with salt and pepper. Cook until the onion becomes transparent – about 5 minutes. Set aside.

Slice the zucchinis in half length-wise and scoop out the seedy flesh along their centers. Spoon the tomato puree evenly among the 4 boats and into their hollow centers. Top with the vegetables mixture, again evenly spread among the 4 boats. Season each with dried thyme and grated mozzarella cheese.

Place on a baking sheet and pop into the oven for 20-25 minutes, or until the cheese has melted and the zucchini is tender. Enjoy!

2. Cauliflower Pizza

Serves 2

Ingredients:

For the crust:

  • 2 cups grated cauliflower (about 1/2 a head)
  • 1/2 cup yogurt
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Dash of sea salt

For the topping:

  • 3/4 cup marinara
  • 1/2 cup of grated mozzarella
  • Choice of cooked vegetables (optional)

Directions: Preheat the oven to 400 degrees Fahrenheit. Place the grated cauliflower on a thin towel spread over a surface. Fold the cloth over the cauliflower and wring it so as to squeeze out all extra water form the cauliflower. Place the dry cauliflower bits into a bowl and add the yogurt, egg, Italian seasoning and salt. Mix until well combined. Form two, ¾-inch thick pizzas on a baking sheet lined with greased parchment paper. Cook for 30 minutes or until the crust is lightly browned. Spread the marinara sauce across the tops of the pizza crusts and sprinkle with the mozzarella and other toppings of choice. Cook for another 5 minutes, or until the cheese is melted and lightly browned.

3. Omelet Pizza

Serves 1

Ingredients:

  • 1 egg
  • 1/2 tablespoon butter
  • 1/4 cup of marinara
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup of grated mozzarella

Directions: Melt butter in a saucepan over medium-high heat. Add the egg. Drop in the tomato sauce, oregano, salt, pepper and mozzarella. After 1 minute, remove from the stove and place the pan into the broiler until the cheese is melted.

4. Pizza Dip

Serves 4

Ingredients:

  • 4 ounces cream cheese, room temperature
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup mozzarella, shredded
  • 1/2 cup grated parmesan
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella
  • 2 ounces pepperoni, sliced
  • 2 tablespoons green pepper, sliced
  • 2 tablespoons black olives, sliced

Directions: Preheat oven to 350 degrees Fahrenheit. In a large bowl, mix together the cream cheese, sour cream, mayonnaise, mozzarella and parmesan. Spread across the bottom of a pie plate. Sprinkle with the remaining ingredients and pop into the oven for 20 minutes.
