5-Minute Vegetarian Taco Recipe with Avocado and Chihuahua Cheese

With just a few simple ingredients on hand, this colorful taco recipe—packed with flavor in each bite—makes a delicious meal with hardly any fuss or muss at all.

My boyfriend and I made these gorgeous tacos for dinner one night when we were craving something wholesome, fresh, and quick. Lo and behold, these absolutely fit the bill!

5-Minute Gorgeous Vegetarian Avocado Taco Recipe

Makes 4 tacos, or 2 servings

Ingredients
4 soft corn tortillas
2 cups shredded coleslaw mix (purple cabbage, green cabbage, red onion, carrots)
1 lime, juiced
Pinch sea salt
½ cup coarsely chopped fresh cilantro
1 large just-ripe avocado, pitted, sliced
1 cup shredded Chihuahua cheese
½ cup salsa of choice (I used a roasted salsa verde)

Directions

Heat tortillas in a dry skillet or over an open flame over very low heat until just warmed through and soft, turning once, about 1 to 2 minutes total. Remove each tortilla to a plate and cover with a towel before heating the next.

Meanwhile, combine coleslaw mix, lime juice, and salt in a small mixing bowl; toss until combined. Set aside.

Assemble the tacos: Lay two tortillas on each serving plate. Top each tortilla with ¼ cup of the coleslaw mix, 1/8 cup of the chopped cilantro, ¼ of the sliced avocado, ¼ cup of the cheese, and 1/8 cup of the salsa.

Sprinkle with an additional pinch of salt, if desired, as well as squeeze of lime juice, and enjoy immediately.
