Green Kale-Covered Popcorn Recipe for St. Patrick’s Day (or Any Day, Really)
St. Patrick’s Day is all about celebrating the color green. Not just in what you wear but also in what you eat. The following green popcorn recipe is unlike typical artificially green party food fare recipes. Instead, it is a superfood recipe that brings together the detox capabilities of kale and the “cheesy” flavor of vitamin B12-rich nutritional yeast to make for a delicious green popcorn snack you can actually call a health food. Preheat the oven to 325 degrees Fahrenheit. Wash and dry the kale and remove the stems from each leaf’s center. Toss the stems and roughly chop the leaves. Add them to a bowl along with the coconut oil, salt and pepper. Toss until all the leaves and all their sides are evenly coated. Lay them out on a baking sheet so no leaf overlaps another. Pop into the oven for 15 minutes, or until the kale leaves have crisped but have not turned browned. After 7 minutes, flip the baking dish around so that all of the leaves cook evenly. When finished, remove from the oven and let cool.
Meanwhile, make the popcorn. Heat the coconut oil in a deep metal pot over high heat. Add the corn kernels and once they begin to pop, cover with a lid. Slide the pan over the heat to move the kernels around. When the pot fills up, remove some of the popcorn to make way for more of the kernels to pop. Once all has popped, set aside.
In a food processor, add the kale chips and pulse until it resembles a coarse flour. Add the kale into a bowl with the nutritional yeast, salt, pepper and garlic powder. Mix until evenly combined. In a separate bowl, add the popcorn. Lightly sprinkle the kale mixture over the popcorn as you toss it. Keep tossing until the seasoning is evenly spread. Serve and enjoy!
