Not only are mushrooms super healthy, containing selenium and vitamin D (and very few calories), but they’re also very rich in an umami, earthy flavor. When cooking mushrooms, the sky is really the limit — they marry so well with so many different dishes and cuisines. To give you an idea of the breadth of the possibilities of these little fungi, we’ve rounded up eleven of our favorite mushroom recipes to enjoy.

1. Portobello Mushroom Cap Pizzas

Portobello mushroom caps make a great stand-in for bread in these mini pizzas. This gluten-free version of one of our favorite meals can also be dressed up with your favorite pizza toppings, like anchovies or black olives.

2. Bok Choy and Mushroom Stir Fry

This plant-based stir fry has everything you need for a fresh, healthy meal: lots of vegetables, protein-rich quinoa, and a lightly spiced chili tamari sauce for a great punch of flavor.

3. Mushroom Fettuccine with Truffled Pecorino

This fettuccine is filled with mushroom flavors thanks to the use of both shiitake and chanterelle mushrooms as well as Cacio di Bosco cheese, a Tuscan pecorino made with truffles. Garlic, shallot, and fresh parsley round out this dish, which only gets better when you use fresh fettuccine.

4. Mushroom and Zucchini Goat Cheese Frittata

This open-faced, baked omelette combines mushrooms, zucchini, goat cheese, and dill for a tasty, vegetable-rich meal that’s just as good for breakfast as for dinner. A few drops of truffle oil are the secret to making this frittata sing.

5. Egg Noodles with Wild Mushrooms and Spring Greens

This simple noodle dish is made with wild mushrooms and mixed greens, tossed in a tasty sauce of white wine, black pepper, and Parmesan cheese. Depending on the season, you could swap out the greens for spinach or baby kale, for example.

6. Mushroom Risotto

Mushroom risotto is one of our favorite mushroom recipes, and this version is one of the best. Fresh portobello and crimini mushrooms as well as dried porcinis give this risotto a true punch of woodsy flavors, and truffle oil and fresh herbs add even more depth to the aromas of this dish. Use a good white wine in the base, and serve the risotto with glasses from the same bottle.

7. Stuffed Portobello Mushrooms with Crispy Goat Cheese

These portobello mushroom caps are stuffed first with a homemade tomato sauce made with lots of garlic and a touch of oregano. Next is sautéed spinach mixed with shallots. Finally, they’re topped with blend of buttery panko and creamy goat cheese before being baked in the oven. This recipe is a delicious vegetarian main or a perfect side for grilled steaks.

8. Gluten-Free Vegan Quiche with Mushrooms, Kale, and Sweet Potato

A quiche without gluten or eggs seems impossible, but you’ll soon see how good it is with this recipe. A quinoa flour crust forms the base in which mushrooms, kale, and a sweet potato and tofu batter are baked. It’s a quiche unlike any you’ve likely tried before, and it’s well worth the venture into uncharted territory.

9. Cream of Mushroom Soup

This homemade cream of mushroom soup is miles away from anything you’d find in a can. Crimini and shiitake mushrooms unite with shallots, garlic, and a touch of tarragon — the secret ingredient that brings out the earthy notes in the star of this soup. Be sure to cook the mushrooms well before puréeing to ensure that you get a silky addition, made even smoother with the addition of heavy cream.

10. Vegan Stuffed Mushrooms

Mushroom caps were just made to be stuffed, and this vegan sausage stuffing is the perfect tool. Made with Tofurky Italian sausage, a nice splash of white wine, and some select herbs and spices, these vegan stuffed mushrooms are deceptively easy and super delicious as an appetizer, passed hors d’oeuvre, or just as a simple dinner.

11. Enoki Ramen

We love going out for ramen, but it’s just as delicious when you make it at home. This relatively simple ramen made with enoki mushrooms and baby bok choy is perfect for cold weather, and you can easily change it up and add your favorite ramen ingredients to the base.
