Even if you have never been to the State Fair of Texas, you probably have an idea of what kind of food is served there. Yes, this is the land of funnel cakes and triple deep fried anything. This is of course why the State Fair of Texas is hailed the "Fried Food Capital of Texas."
Every year the fair hosts the Big Tex Choice Awards, where concessionaires attending the fair come up with the biggest and baddest of fried food concoctions. The finalists for this year's awards were recently announced, and since the fair starts September 26 and runs through October 19, this gives you plenty of time to book your tickets and head to Dallas so you can try them out in person.
Just what will await you? All of these eight finalists:
1. Chicken Fried Loaded Baked Potato
2. Deep Fried “Breakfast for Dinner”
Why yes, yes it is totally reasonable to fill a flour tortilla with eight classic American breakfast items - scrambled eggs, breakfast sausage, bacon, potatoes, ham, onion, cheddar cheese and gooey cinnamon roll bits - and then fry it.
3. Deep Fried Texas Bluebonnet
This is essentially a super-sized blueberry muffin (and then fried, clearly). It's a scone-style batter stuffed with cream cheese, blueberries and white chocolate. That's all deep-fried, and then they add whipped cream, white chocolate and powdered sugar on top. Is your heart rate up yet?
4. Fried Gulf Shrimp Boil
Like an entire shrimp boil in one sweet State Fair basket. Baby gulf shrimp, diced red potatoes, onion, lemon, and seasoning are formed around a cocktail shrimp, which is then thrust into the fryer.
5. Fried Sriracha Balls

It was only a matter of time before someone came up with this. How do you make a fried Sriracha ball you ask? Well, you shred some chicken, mix it with corn, green chilies, tomatoes, and Sriracha hot sauce, then form it into balls and coat it with tortilla chips.
6. Fried Sweet Texas
This is... wait for it... a fried pie. Or shall I say, an assortment of pies? Yes, it's pie dough filled with pecan pie, peach cobbler, and creamy buttermilk pie filling. Fried and served with ice cream.
7. Funnel Cake Ale
What would a state fair be without a funnel cake? Only one thing: an ale brewed to taste like a funnel cake. You can even have the rim of the glass coated in powdered sugar if you like.
8. Twisted Texas Tacos
This ain't no Baja fish taco my friends. No, this is Texas, and in Texas you serve brisket, double-dipped in a barbecue spiced buttermilk batter and deep-fried. That's not all; it's served with fried okra, and topped off with gravy and chili.
If you're craving a salad and a glass of water after reading that list, I don't blame you.
