Feel that chill in the air? It’s hard to shake. But with the right meal – nay, the right grilled cheese recipes – you can beat any chill that shoots through your bones. And while the standard grilled cheese made with sharp cheddar, bread and a tiny slab of butter is quite tasty, there are myriad other grilled cheese recipes that taste equally (if not more) amazing! Here are two of our favorites.

2 Gooey Grilled Cheese Recipes to Savor

1. Fig Grilled Cheese via Free People’s Blog

Yield: one serving

Ingredients*
Whole-wheat sourdough
Fresh figs
Goat cheese
Thai basil
Tamarind glaze
Butter for frying

*Use all organic ingredients if you can.

Method
Cut bread into thin slices. On one side of the bread: drizzle glaze. On the other slice: Spread a layer of goat cheese. Add a thin layer of fresh, sliced figs and picked, Thai basil. Press both sides together and get ready to grill! Melt butter in a frying pan until evenly coated then heat both sides of the sandwich until golden brown (and cheese is melted).

2. Hot Chile Grilled Cheese via Eating Well, Delish

Yield: four servings

Ingredients*
4 poblano peppers
1 can (14-ounce) pinto beans
3 tablespoon(s) prepared salsa
1/8 teaspoon(s) salt
1/2 cup(s) shredded Monterey Jack, or Cheddar cheese
2 tablespoon(s) low-fat plain yogurt
3 scallions, sliced
2 tablespoon(s) chopped fresh cilantro
8 slice(s) sourdough bread

*Use all organic ingredients if you can.

Method
Assemble ingredients between bread. Place four, 15-ounce canned goods and a medium skillet (not nonstick) by the stove. Heat 1 teaspoon canola oil in a large, nonstick skillet over medium heat. Place two fully-constructed grilled cheese sandwiches in the pan. Then place the medium skillet on top of the sandwiches — weighted down with the cans. Cook the sandwiches until golden on one side (about 2 minutes). Reduce the heat to medium-low, flip the sandwiches, replace the top skillet and cans, and cook until the second side is golden (1 to 3 minutes more). Repeat with another 1 teaspoon oil and the remaining two sandwiches.
