4 Gourmet Vegetarian Sandwiches to Make Meatless Monday a Snap: No More PB & J!

There’s a lot of variety in a sandwich. A sandwich can be simple and portable, the perfect on-the-go meal, or it can be refined and feature gourmet ingredients, something to be enjoyed for a special occasion. And while the sandwiches of our youth — ham and cheese or chicken with tomato — seemed to center, for the most part, around meat, vegetarian sandwiches are just as delicious and easy to make. For Meatless Monday, we’ve selected four of our favorite vegetarian sandwiches to enjoy.

First, a vegetarian version of a Louisiana classic: the muffuletta. Muffuletta is traditionally made with layers of olive salad and various meats and cheeses. In this vegetarian muffuletta recipe, the meats are swapped out for a flavorful mix of multicolored bell peppers and parsley. Tossed with the olives, seasonings, and grated Swiss cheese, the bell pepper mixture is stuffed into the muffuletta loaf, which is heated just enough to melt the cheese, all the while keeping the vegetable mixture fresh and crisp.

This panini manages to be gourmet and delicious with a relatively short ingredients list. Local, seasonal tomatoes are paired with three different types of cheese and fresh basil. Assembled on thick country bread and grilled until the cheese is hot and melty, this sandwich will thrill everyone at your table.

This bean burger is made with a spiced black bean and quinoa patty and topped with blistered kale. What could be more delicious on Meatless Monday? But aside from its tastiness, it’s also packed with two great sources of vegetarian protein, which makes it an even better choice.

When you think of a sandwich, a taco might not be the first thing that comes to mind, but what is a taco if not a tortilla sandwich? This vegetarian taco is made with a simple combo of tomatoes, jalapeño peppers, red onion, corn, and black beans. It’s fresh and flavorful, and it’s even better with a squeeze of fresh lime juice.
