3 Watermelon Recipes That Go Beyond Slicing and Serving

Watermelon is a summer staple, but there are more ways to enjoy it beyond slicing and serving. 1. Watermelon and Feta Salad with Cucumber and Mint
Serves 2
Ingredients
1/4 watermelon, diced into bite-sized chunks
1/2 cucumber, diced into bite-sized chunks
2 ounces feta cheese (preferably sheep), crumbled
Juice of 1 lime
1 tablespoon extra virgin olive oil
Handful of fresh mint leaves, chopped
Dash of sea salt
Freshly ground black pepper
Directions: Toss together the watermelon and cucumber in a large bowl. In a small bowl, whisk together the olive oil, lime juice, sea salt and black pepper. Pour the sauce over the watermelon and cucumber and add the mint leaves. Toss. Next add the feta cheese and toss lightly before serving.
2. Pineapple Watermelon Smoothie
Serves 2
Ingredients
1 cup chopped watermelon
1/2 cup frozen pineapple chunks
3/4 cup coconut water or water
Directions: Add all ingredients to a blender and blend until smooth.
3. Grilled Watermelon Cheese Bites
Makes 8 bites
Ingredients
1/4 watermelon, seedless
8 ounces halloumi cheese
Large handful fresh basil leaves
2 tablespoons balsamic vinegar
Salt and pepper
Olive oil
Directions: Slice watermelon into 16 bite-sized square pieces. Slice the halloumi into 8 bite-sized square pieces the same size as the watermelon pieces. Place all the watermelon and halloumi pieces on a grill that has been greased with the olive oil. Grill for 2 minutes on each side for the watermelon and 1 minute on each side for the halloumi. Remove both from grill and get ready to assemble. Drizzle the watermelon with the balsamic vinegar. Place 8 pieces of the watermelon on a paper-towel lined plate. Top each with 1 slice of grilled halloumi and a leaf or two of basil. Season with salt and pepper and top with another slice of the watermelon to top it off. Enjoy!
