4 Delicious Coconut Milk Recipes to Put Paradise on Your Plate for Meatless Monday
As the weather gets drearier, add some sunshine to your plate with exotic coconut milk recipes. Just the flavor of coconut milk can make you reminiscent of a warm-weather island. This week for Meatless Monday, we’re highlighting four of our very favorite coconut milk recipes to savor, which you can make with your favorite canned or homemade coconut milk.
While coconut milk is often used in dessert recipes, these recipes are all savory and packed full of nutritious ingredients, including coconut milk itself, which contains not only healthy fats but also antibacterial and antiviral properties–even better for the winter cold and flu season.
This super simple pumpkin soup recipe hails from British chef Jamie Oliver, and it adds a lot of flavor to a fall and winter standby to make it just a bit more exciting. Pumpkin gets sautéed with ginger and shallots before being simmered in vegetable stock and spiced up with chili powder. The coconut milk adds body and flavor to the finished soup.

Sweet potatoes and coconut milk are a natural pair, and they come together beautifully in this flavorful gratin. With a hint of sweetness thanks to some maple syrup and a bit of spice with a touch of dried chili, this dish is like none you’ve tried before. The almond butter and lime juice also give it a bit of a Thai flair that’s very welcome.

Thai green curry is made up of a surprising combination of flavors like garlic, fresh chilis, kaffir lime, lemongrass, galangal, and basil. With this entirely vegan version of the dish, the green curry paste base is mixed with coconut milk and made into a sauce to coat tofu cubes and a variety of different veggies. Serve with a side of rice for a complete meal.

This tasty soup recipe comes from the other end of the Thai curry spectrum, using red curry paste, made with dried and fresh chilis, lemongrass, galangal, and coriander. Be sure to either make your own vegetarian curry paste or check the ingredients on your bottled paste to make sure no shrimp paste inadvertently makes it into this Meatless Monday dish. The red curry paste gets stirred into a soup of cauliflower, green onion, tomato, and green beans, which is sweetened with a touch of coconut milk. A bit of lime juice is all you need to make these flavors sing.
