Vegetarian Chili

Monday is not most people’s favorite day of the week. It’s a jump back into the routine of work, a whole five days away from the next Saturday. It can be hard to get excited about Mondays. So give your Monday a little jolt with some coffee recipes! Coffee isn’t just for the morning; it can give a delicious, bitter and rich flavor to your favorite recipes. This Meatless Monday, bring coffee center stage!

Start things off with a warming coffee smoothie. While warming and smoothie may seem oxymoronic when paired together, this drink is the perfect way to get your day off to a good start. Don’t mistake this healthy smoothie for a milkshake. It’s chock full of delicious vegan ingredients like bananas, raw nuts, hemp and chia seeds and spices. With, of course, that oh so necessary jolt of morning caffeine.

Vegetarian Chili

When dinnertime rolls around, let this vegetarian chili work its magic. The base of the chili has two secret ingredients: coffee and chocolate. Together, they add richness that vegetarian chili recipes often lack. Full of vegetables and beans, this protein-rich chili is warming and delicious.

If you’re in the mood for something a bit different, try a coffee risotto. Coffee lends richness, while mushrooms add a woodsy aroma. Just swap the veal stock out for vegetable stock, and this risotto will be perfect for your Meatless Monday meal.

Of course, we can’t forget dessert! Our coffee bananas foster takes its inspiration from New Orleans Creole cuisine. The coffee in this recipe comes from the choice of ice cream, but if you want to add even more coffee flavor to the dessert, consider serving it affogato-style, with a bit of espresso drizzled over the top!
